Stuffed Brinjal

Raw Small Brinjals

 Stuffed Brinjals in gravy while cooked

Ingredients for filling:
Small round brinjal (egg sized)                             6
Gram flour 1 tbsp
Dry roasted de skinned groundnuts                    1/4 cup
Red chilli powder                                                  1/2 tsp
Garam masala -                                                    1/4 tsp
Coriander podwer                                                 1 tsp
Turmeric powder                                                   1 tsp
Lemon juice                                                           1/2 tsp or dry mango powder
Oil                                                                          1 tsp
Water if required
Salt to taste


Ingredients for gravy
Tomatoes sliced big                                           3 (tomato gravy 1/2 cup)
Cumin seeds                                                        1/4 tsp
Asafoetida                                                             1/4 tsp
Turmeric powder                                                 1/4 tsp
Coriander podwer                                               1 tsp
Red chilli powder                                                 1/2 tsp
Ginger grated                                                        1' piece
Green chilies                                                         2
Garam masala                                                       1/2 tsp
Oil                                                                             2 tbsp
Water                                                                       1/ 2 cup
Salt to taste
French coriander finely chopped for decoration

Method For filling Brinjal
Wash brinjals with their stalk intact, keep aside
Crush ground nuts coarsely
Mix rest of ingredients well add a pinch of water
Make two slits in each brinjal soas to make four pieces from base but don't separate them from top
Now fill the masala  in brinjal up to its capicity keep aside

Method For gravy
Heat oil in pressure cooker
Add masala except Garam masal Sautè
Add tomatoes sautè till soft add water mix well
Now put brinjals carefully
Close the lid, cook, wait for one whistles
Put of the fire
Let it cool
Open the lid take them out carefully
Sprinkle gram masala
Garnish with coriander serve hot with roti and rice
Alternatively you can cook it in a wok
